We’re re-crecating several older recipes from the Fredericton Cathedral repair fund cook book. Amber Chase, of Victory recreated this very simple feather cake recipe. It’s denser than a plain vanilla cake, but also quite a bit lighter than pound cake. It’s an easy delicious recipe that’s now part of Amber’s list of regular recipes!
Ingredients:
– 1 cup sugar
– 1 tbsp butter
– pinch salt
– 1 tsp vanilla
– 2 eggs, well-beaten
– 2 cups sifted flour
– 2 tsp (heaping) baking powder
– 1 cup water
Here is the original recipe from page 148 of the 1911 Fredericton Cathedral repair fund cookbook:
Method:
1) Preheat oven to 350.
2) In a small mixing bowl, beat two whole eggs until slightly fluffy,
3) In a medium-large mixing bowl mix sugar with butter, salt, vanilla and whisk or beat with eggbeaters until smooth,
4) Blend baking powder into sifted flour
5) Mix eggs into sugar mixture followed by the flour, then water
6) Pour the mixture into a greased, floured bundt pan, and bake for 45-50 minutes, or until a fork comes out clean.
7) Frost with a fluffy buttercream or leave un-frosted, and enjoy!
